Ham And Spinach Mini Omelets

I've been having a difficult time coming up with breakfast ideas for Boo. I'd like to incorporate more meats and veggies into his meals. While scrolling interest I found several recipes for baked eggs using a muffin tin. Here is my version

Ham and Spinach Mini Omelets

Diced Ham
Frozen Spinach, Thawed
Shredded Swiss Cheese
Milk
Eggs

Preheat oven to 350. Spray muffin tin with cooking spray. I used coconut oil spray.
Whisk eggs and small amount of milk. I used 9 eggs to make my 12 omelets.
Place ham and spinach into each tin. I cut the ham cubes a bit smaller first. Pour eggs on top of each tin, 3/4 of the way full. Top with a bit of cheese. Bake 20 min.

Our Future Chef

We wanted to get a play kitchen for Boo because he liked playing with the one at his grandmother's house. I posted an ad on facebook that I was in search of one that would be suitable for a toddler boy. I quickly received a response. They said that the kitchen was a gift to thier kids and she wanted to gift it to another child.
I picked it up yesterday and the mom was super kind. She gave us the kitchen for free with the condition being that we gift it to another kid when we no longer wanted it.
Boo was so excited to play with it. She gave us some play food and a few dishes too. I think that it is his new favorite toy. He has played with it every waking second since he has had it.

Dinner Fail

Creamy Italian chicken in the crock pot was on my menu for dinner. It called for chicken breasts, cream of chicken soup, cream cheese and a packet of italian seasoning. Slow cooked for 4 hours, sounds good and simple..
So I throw in all of the ingredients in the pot after lunch. Dinnertime comes and I check it. It looks disgusting. The cream cheese had become chunky and like milk curdles.  Hubby said that it smelled like vomit..
We ordered chinese food for dinner and threw out the chunky cheese puke chicken.

Clothing Exchange

I came across a facebook posting about a clothing exchange at the nearby Methodist church. They open it twice a week and it happened to be open today. So I gathered up some things that Buggy had outgrown.
It is really a great thing. They count your items and you are able to choose that many from what they have. I was mostly looking for summer clothes for Boo. I had 24 things to exchange. I was able to find 7 pairs of shorts, 5 tee shirts, some sweat pants for Boo and a few sleepers for Buggy. I'm sure that I will be a frequent visitor as quickly as my boys are growing.

A Playdate

Just when you think that you have your stuff together, try leaving the house. I took the boys ,Buggy, 2 months and Boo, 13 months on a playdate today. My first time out alone with both kids. They had napped, been fed, changed, dressed and bundled up for the cold. Took me all morning to prepare for a trip 10 minutes away to the mall. I almost didnt go at the last minute because Boo fell while I was dressing his brother. He had a full out meltdown but shortly recovered.
This was a playdate that was arranged by a friend via facebook. She was unsure of how many mommies would show since it was a last minute arrangement. Invites were made the day before. I had to get diapers for Buggy so we met up in the Target store and then went to the malls play area to let our kiddos loose.
The mall area had several soft playstructures for climbing, carnival like mirrors, and no enclosure to keep kids inside. So of course my child would be the escapee. He was the only one there not walking and also the only one intent on making a mad crawling dash for the exit at every opportune moment. I spent an hour chasing him and bringing him back into the play area just to have him make an escape yet again. All this while keeping a close watch on Buggy to ensure that a strangers child didnt topple his car seat over or poke him in the eye. I finally got Boo interested in the structure with a tunnel and he was enjoying crawling in and coming out the other side. That was quickly ruined by older kids running circles around it nearly trampling on my boy as he came unexpectantly out of the tunnel. Buggy began to fuss for a bottle about this time. I was  unable to feed him and chase Boo from his speedy escapes. So I had to confine Boo to the stroller and hence the end of our playdate fun.

Dinner

It's cold here in Virginia Beach today. So we are going to warm up with some Slow Cooker Chicken and Dumplings
